Tasty Tuesday: Broccoli Salad

Broccoli salad is such an easy dish to make. It’s perfect as a side dish for summer BBQ,s, it’s ideal for potlucks (you will come home with an empty bowl!), and you can make it up to a day ahead of time.

It’s a favorite side dish in my house no matter what I serve it with.

Ingredients

8 cups of broccoli, cut into bite sized pieces

1 cup green grapes, quartered lengthwise

1/2 cup bacon bits

1/2 cup sunflower seeds

1/4 cup cranberries

1/2 cup shredded cheese (cheddar or marble)

3 Tbsp apple cider vinegar

2 Tbsp sugar or sugar substitute

1 cup mayonnaise (I use half fat mayo)

Salt and pepper to taste

Instructions

In a medium sized bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt and pepper.

In a large bowl, combine broccoli, grapes, sunflower seeds, cranberries, cheese and bacon bits.

Pour the prepared dressing over and mix well.

Refrigerate for at least one hour before serving.
